Talk about an autumn-y treat.
This cookie is full of fall flavors, featuring apple and cinnamon. Sounds like something to go with that hot cider, huh?
1 cup instant oats
3/4 cup flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1/8 teaspoon salt
1-1 1/2 tablespoons coconut oil
1 large egg
1 teaspoon vanilla extract
1/2 cup honey
1 cup finely diced red apple (about 1 medium)
- Mix the dry ingredients in a medium bowl.
- In a separate bowl, stir together the the coconut oil, egg, vanilla and honey. Add the dry ingredients mixture and stir until just mixed. Fold in the apple pieces and chill batter for 30 minutes.
- Preheat the oven to 325 F. Line a baking sheet with parchment paper.
- Drop cookie dough in rounded scoops onto the sheet and flatten slightly. Bake for 13-15 minutes.
