Give ‘Em Kale is now open in Union Grounds and offers students “four salad bases, three protein options and 10 items available to add on,” said Chef Johnathan Flores, TCU Dining’s new director of culinary. “The pop-up restaurant will also offer wraps.”
The name “Give ‘Em Kale” was inspired by student creativity and input.
Flores said Union Grounds replaces the pop-up restaurant every semester with something new. To get ideas on what the new pop-up will be, he and his team surveyed students and found a lot of them requested for healthier options.
So, salads and wraps were the options Flores turned to, he said.
Once Flores got the name, he began to create the menu.
Kale, a trendy food, is an option that many students are attracted to. It is a considered a superfood that can be paired with many different options in order to create a healthy option for students.
“I believe students will find them light, tasty and different than a salad or wrap they might get elsewhere on campus,” said Craig Allen, director of housing and residence life.
Sophomore nutrition major, Jessica Mertes, said she is a fan of the new option.
“I tried Give ‘Em Kale last week and have been, I think, five times since,” Mertes said. She explains her favorite combination is the quinoa wrap with black beans and that she is so happy TCU decided to change the pop-up from grilled cheese to something healthier for all students.
